All you need to make these flourless peanut butter banana muffins is one bowl and a muffin pan! Low dish recipes are my favorite as a busy mama of two. Kids create mountains of dishes on their own… I don’t know about you, but I don’t need any extras to do.

These silicone muffin liners are super convenient (you can get a set here), but by no means are they necessary.

8 simple ingredients for these flourless peanut butter banana muffins

  • 2 large or 3 small-medium bananas
  • 1/2 cup natural peanut butter
  • 2 tbsp honey (or maple syrup)
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 1/4 cup oat flour (blend your oats yourself to make it if you don’t have any on hand)
  • 1/2 tbsp baking powder
  • 1/4 tsp salt
  • extras if desired: chocolate chips or your favorite chopped nuts make excellent additions!

How do you make peanut butter banana muffins?

One Bowl Peanut Butter Banana Muffins

First, you spray a muffin tin and preheat your oven to 350F.

Next, mash your bananas and mix all your wet ingredients together in a medium bowl (peanut butter, honey, vanilla & eggs).

After your wet ingredients are well mixed and smooth, you can add in the dry ingredients (oat flour, baking powder and salt). Mix until combined.

Lastly, fold in any additions you want. My favorite are chocolate chips and chopped pecans. Yum!

Bake for 17-20 minutes. Tops will start to crack and a toothpick will come out clean.

How do you make oat flour to use for baking?

If you don’t have any oat flour on hand you can easily make your own by blending oats or quick oats into flour. My personal favorite are the organic sprouted oats from Costco.

Ingredients
  

  • 2-3 ripe bananas
  • 1/2 cup natural peanut butter
  • 2 tbsp honey
  • 1 tsp vanilla
  • 2 eggs
  • 1 1/4 cup oat flour
  • 1/2 tbsp baking powder
  • 1/4 tsp salt
  • 1/2-1 cup add ins chocolate chips or nuts

Instructions
 

  • Preheat oven to 350F. Spray muffin tin and set aside.
  • Mash bananas in a medium sized bowl.
  • Add remaining wet ingredients (peanut butter, vanilla, eggs and honey). Mix well.
  • Add salt, baking powder and oat flour and mix until combined.
  • Stir in desired extras.
  • Bake for 17-20 minutes.
